Chocolate Ice Cream

This is the best recipe for chocolate ice cream I've ever had. I found it in my Donvier ice cream maker's instruction manual. It makes the best ice cream. It can be made low-fat, but it won't be as creamy and delicious.


3 egg yolks

1 cup of sugar

1 1/2 cups of milk

2 cups of light cream

1/3 cup unsweetened cocoa powder (I use Hershey's European Style Dutch Processed Cocoa)

1 teaspoon vanilla


  1. Beat milk and egg yolks together. Blend in sugar. Cook over medium heat, stirring constantly, until thick enough to coat the spoon.
  2. Remove from heat, sift cocoa into the mixture, then beat until well blended.
  3. Cool. Add cream and vanilla. Mix well.
  4. Refrigerate overnight.
  5. Put into ice cream maker and process according to instructions.
  6. Makes 1 quart
