Chicken Salad
Ingredients:
Marinade
2 Boneless chicken breasts
1/4 cup soy sauce
1 tablespoon grated fresh ginger
2 cloves chopped garlic
1/2 chopped onion
Cover chicken with soy and sprinkle with ginger, garlic, and onion. Marinate overnight.
Grill chicken or fry in a non-stick pan until done. Let cool and then chop into bite sized pieces.
Salad dressing
Cover chicken with mayo-not fat-free. Drop in 2 tablespoons of dill relish. Chop up two stalks of celery and sprinkle with salt and pepper. Let set up for about 2 hours before serving.
